Instructions
Place all ingredients for the sweet potato lentil curry in a large pot. Bring to a boil, reduce the heat, and let simmer covered for about 40 minutes.
Once it is cooked, sprinkle some chopped green onions or parsley on top. Enjoy!
Notes
Serve the sweet potato lentil curry with some cooked brown rice.
You can adjust the thickness of the lentil curry by adding more or less water according to your preference.
