- 1 large (400 g) sweet potato chopped
- 1 large (130 g) carrot chopped

- 1 tsp (1 tsp) ginger
- 2 (2) bay leaves

- ¾ cup (180 ml) coconut milk full-fat
- 3½ cups (840 ml) water
- ¼ bunch (¼ bunch) chopped parsley for sprinkling
