Ingredients
For the salad
- 1 can red kidney beans drained and rinsed, 15-ounce can
- ⅔ cup (120 g) quinoa dry
- ½ cup (65 g) frozen green peas
- 1 carrot chopped
- ¼ head romaine lettuce chopped
- 2 tomatoes chopped
- 1 red onion chopped
For the dressing
- ½ lemon squeezed
- 1½ inch fresh turmeric tuber pressed or ½ tsp turmeric powder
- 3 cloves garlic pressed
- ¾ tsp salt
- 2 tbsp ground flax seeds 1/2 tsp flaxseed oil optional
- 2½ tbsp water

Instructions
- Place quinoa, chopped carrot, and peas in a saucepan add water, and bring to a boil. Cover and simmer for 15 minutes. Drain and cool for a while, when ready.
- Chop the vegetables and combine all ingredients for the salad in a large bowl.
- In a small bowl combine all ingredients for the dressing (freshly squeezed lemon juice, pressed garlic, turmeric, salt, ground flaxseed and water). Stir everything well.
- Pour the dressing over the salad, toss everything well and enjoy.
