Ingredients

For the salad

  • 1 can red kidney beans drained and rinsed, 15-ounce can
  • cup (120 g) quinoa dry
  • ½ cup (65 g) frozen green peas
  • 1 carrot chopped
  • ¼ head romaine lettuce chopped
  • 2 tomatoes chopped
  • 1 red onion chopped

For the dressing

  • ½ lemon squeezed
  • inch fresh turmeric tuber pressed or ½ tsp turmeric powder
  • 3 cloves garlic pressed
  • ¾ tsp salt
  • 2 tbsp ground flax seeds 1/2 tsp flaxseed oil optional
  • tbsp water

Instructions

  • Place quinoa, chopped carrot, and peas in a saucepan add water, and bring to a boil. Cover and simmer for 15 minutes. Drain and cool for a while, when ready.
  • Chop the vegetables and combine all ingredients for the salad in a large bowl.
  • In a small bowl combine all ingredients for the dressing (freshly squeezed lemon juice, pressed garlic, turmeric, salt, ground flaxseed and water). Stir everything well.
  • Pour the dressing over the salad, toss everything well and enjoy.
