Ingredients
- 1 medium (330 g) sweet potato
- 1 black beans 15-ounce can, rinsed and drained
- 1 small (60 g) onion finely diced
- ½ cup (50 g) quick oats
- ½ tbsp cumin
- 1 tsp paprika
- 1 tsp coriander
- ⅔ tsp Himalayan salt

Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Chop the sweet potato in 3-4 large pieces. Put them in a pot, cover with water and bring to a boil. Reduce the heat and cook for about 15 mins. Once it's ready, drain it.
- In a large bowl, mash the cooked sweet potato with a fork. Add all the ingredients to the bowl and mix well to combine.
- Use your hands to lightly press and shape the mixture into 6 patties.
- Bake for 20 mins. Let them cool for a few minutes until firm.
