Ingredients
- ½ cup (70 g) raw almonds
- ½ cup (70 g) pitted dates
- 1 tbsp peanut butter
- 1 tbsp cocoa powder
- ¼ tsp vanilla powder
- pinch of salt
- 1 tbsp water

Instructions
- Put all ingredients in a food processor and blend for several minutes into a thick, sticky dough. You may need to scrape down the sides from time to time. (*see notes)
- Remove the dough from the food processor and shape it into a ball. Put it in the fridge or freezer and chill for about 15 mins. (This will make it firm enough and easy to work with.)
- Place the chilled dough between two layers of parchment paper and roll it out with a rolling pin. It should be about ¼- inch (0.5-0.6 cm) thick.
- Use a star-shaped cookie cutter to cut out the cookies. You can dip your cutter in a bowl of cocoa powder between cutting to prevent sticking.
- Depending on the size of your cutter the recipe will make about 20 cookies. You can eat them right away or put them in the fridge to firm a bit. Enjoy!

Notes
- You can also put the almonds first in the food processor and pulse until finely chopped. Then, add the other ingredients for a smooth and fine texture.
