- 1 ½ cup (165 g) apple shredded
- 1 cup (95 g) quick oats
- ½ cup (80 g) pitted dates heaping
- ⅓ cup (80 ml) water
- ½ cup (50 g) walnuts chopped
- 1 tsp cinnamon
- ½ tsp cardamom

Instructions
- Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
- Combine the pitted dates and water in a food processor. Process until smooth, scrape the sides of the bowl to make sure all dates are incorporated.
- After that, mix all the ingredients (shredded apple, oats, chopped walnuts, cinnamon, cardamom, and date mixture) in a bowl. Stir until all the ingredients are combined into a thick dough. Let sit for about 5 mins for the oats to moisten a bit.
- Take about one tablespoon of the mixture and shape it with your hands into a round cookie. The recipe makes about 11 cookies.
